Ingredients
- 1 1/2 cups banana flour
- 1/2 cup almond meal or oat flour (or any gluten free flour)
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- pinch of sea salt
- 1/4 teaspoon cinnamon
- 6 tablespoons melted butter
- 1 egg
- 1/4 cup coconut sugar (you can also use brown sugar)
- 3/4 cup maple syrup
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350 degrees and spray a standard cookie sheet with nonstick spray or olive oil
- In a large bowl, whisk together banana flour, almond meal (or oat flour), salt, baking powder, baking soda and cinnamon. Add the chocolate chips and whisk to combine
- In a separate small bowl, mix the butter, egg, coconut sugar and maple syrup
- Add the wet ingredients to the dry ingredients and stir to mix well
- Using a melon ball scooper, or a heaping spoonful, place the dough in round cookie shapes onto the baking sheet
- Bake for 10 minutes and allow to remain on cookie sheet before transferring to a wire rack to fully cool
