Mix Dry Ingredients
- In a large bowl, combine the cassava flour, sugar, baking powder, and salt
Prepare Wet Ingredients
- In another bowl, beat the eggs and milk together until you have a homogeneous mixture
Combine Mixtures
- Pour the liquid mixture into the bowl with the dry ingredients and mix until you have a smooth batter
Heat the Skillet
- Heat a non-stick skillet over medium heat and lightly grease it with butter
Cook the Tortitas
- Pour small portions of the batter into the skillet, forming round cakes
- Cook the tortitas for about 2-3 minutes on each side, or until golden brown
Repeat
- Repeat the process with the remaining batter
Serve
- Serve the cassava cakes warm, accompanied by your favorite syrup or fruits
